The seas of his professional life have been anything but calm, yet Maruti navigated them with the grace and skill of a seasoned sailor. His extensive experience in hotel operations, sales, and guest management has been the compass guiding his decisions. He has served in significant roles at some of the most renowned establishments in the industry, including ITC Hotel in Hyderabad, Sahara Star in Mumbai, Taj President in Mumbai, Royal Orchid, Lemon Tree Hotels, and Citrus Hotels.

Each port of call added to his treasure trove of knowledge, making him a master not only of culinary arts but also of understanding the intricate needs of customers. 

His experience of a 25-year voyage through the hospitality sector has been marked by a relentless pursuit of excellence, a trait that has become the hallmark of his leadership at M Square Hotel & Resort.

Chef Manjesh Prasad’s voyage began at the esteemed ITC Sonar Bangla, where he first dipped his hands into the rich tapestry of Indian cuisine. The seas then carried him far from the shores of India to the grand vessels of Carnival Cruise Lines. This experience was transformative, exposing Chef Prasad to a diverse international clientele and showcasing his versatility. He mastered the art of catering to a global palate, adapting and innovating with each dish to meet the varied tastes of passengers from all corners of the world.

Returning to the Indian subcontinent, Chef Prasad took on pivotal roles at Vivanta by Taj, Hyderabad, and Marriott Hyderabad. Here, he became known for his innovative fusion dishes, blending traditional flavours with modern techniques to create elevated dining experiences that delighted guests and set new standards in culinary excellence.

At IHG Crowne Plaza Jaipur, Chef Prasad’s creativity knew no bounds as he expertly blended local flavours with international cuisine, creating a menu that was as diverse as it was delicious. His tenure at Four Points by Sheraton further cemented his reputation, as he skillfully catered to a wide range of tastes, showcasing his diverse culinary skills.

Chef Vinod Soni embarked on his gastronomic adventure in 1999, setting sail from Reliance Plaza. It was here that his talent for creating innovative dishes first shone brightly, captivating the palates of many and marking the beginning of a distinguished career. His early success was a precursor to the remarkable achievements that would follow.

 

Navigating through the culinary seas, Chef Soni’s next significant port of call was the prestigious ITC Fortune Welcome Group. This tenure was a period of refinement and growth, where he honed his skills under the high standards and luxurious expectations of this esteemed establishment. The experience ingrained in him the importance of precision, quality, and an unwavering commitment to excellence.

As his journey continued, Chef Soni docked at Country Inn & Suites by Carlson. Here, he broadened his culinary repertoire, catering to a diverse array of tastes and preferences. His adaptability and creativity flourished, allowing him to craft menus that delighted guests from all walks of life.

The winds of change then guided him to Citrus Hotel, where his focus shifted to fresh, locally sourced ingredients. Chef Soni’s creativity reached new heights as he embraced the essence of local flavors, turning simple, wholesome ingredients into extraordinary culinary masterpieces.
